Currently, I am a postdoctoral researcher in the Department of Food Science and Human Nutrition at the University of Illinois Urbana-Champaign. I studied my PhD at the Department of Agricultural Chemistry and Food Science and theInstitute of Food Science Reserach of the Universidad Autónoma de Madrid, Spain. My research focuses on the development of new healthy ingredients with potential preventive effect against cardiometabolic diseases.
