Alexandra (Lexi) L. MacMillan Uribe, PhD, RDN, is an Assistant Professor for the Texas A&M AgriLife Institute for Advancing Health through Agriculture and in the Department of Nutrition at Texas A&M University. Dr. MacMillan Uribe was a postdoctoral fellow for the Maternal and Child Nutrition Training Grant at Cornell University. She obtained a BS in Psychology from Penn State University, a Master’s in Human Nutrition from Arizona State University, a PhD in Human Nutrition from the University of Wisconsin-Madison, and received her Registered Dietitian Nutritionist training through the University of Michigan. Her research interests include developing, adapting, and evaluating community-informed interventions that address health equity issues and promote healthy lifestyles among caregivers and children in urban, underserved communities.
