Sustainable protein ingredients often come with unique origins and use innovative production processes, both of which have a significant impact on product design. In this session, we will touch on the expansion and re-definition of product design success criteria required to understand the value proposition for clients and consumers. The marketability and commercial success of sustainable protein ingredients often depends on understanding their impact on sensory, functional properties of the product, impact on process scalability, and on the regulatory perspectives as it related to product safety and the impact of the approval process on market launch timelines.
