Egg Farmers of Canada Research Chair in Sustainability University of British Columbia, Canada
With today’s consumers seeking greater transparency to support their food choices, sustainability measurement, management and reporting has emerged as a growing priority in the agri-food sector. As interest in pulse proteins as part of a sustainable, nutritious diet grows, the pulse industry is well-positioned to capitalize on these growing global opportunities. However, the availability of credible, representative data for pulse processing (wet and dry fractionation) has presented a critical bottleneck. This presentation will discuss an ongoing project to develop public facing datasets to enable sustainability assessment of processed pulse products in Canada, along with a tool for use by companies/facilities to support their own confidential sustainability assessment, management, and communication initiatives.
