Currently, most plant-based meat products are frozen. After thawing, they have a very limited shelf-life, typically 3-5 days. With this being the case, there is a desire for a clean label antimicrobial solution that can provide a 30-day shelf-life while being refrigerated instead of frozen. This study aimed at screening the efficacy of the clean label antimicrobial BactoCEASE® PURE Liquid (BC Pure Liquid). An in-house plant-based meat analogue recipe was used in this shelf-life study which included negative control with no antimicrobial, BC Pure Liquid at 0.35%, and 0.45%. The patties were made, frozen, slacked, and studied for 41 days. Parameters evaluated were pH, sensory hedonic preference, visual microbial spoilage, microbial enumeration for aerobic plate counts (APC), lactic acid bacteria (LAB), and yeast/mold (YM) at regular intervals. The study showed that yeast/mold was the first mode of failure in the untreated samples with visual mold observation by day 16. APC counts dominated the microbial load in the patties, with negative control reaching 7 logs by day 22 and LABs and yeast/mold reaching 4.7-4.9 logs by day 41. BC Pure Liquid treated samples showed about 2 log lower counts compared to the negative control. BC Pure Liquid at 0.35% provided a shelf-life of 35 days, whereas at 0.45% lasted for > 41 days based on the visual microbial growth. The antimicrobial treatments caused a minimal change in the pH of the samples with no impact on the texture/sensory. The sensory acceptability of the antimicrobial treated patties were similar to that of the negative control. To conclude, BC Pure Liquid provided the target shelf-life of 30 days when the patties were frozen, slacked, and stored refrigerated. BC Pure Liquid was proficient in controlling APC, LAB, and Y/M counts, making it an extremely promising candidate for the plant-based meat analogue market.
