Kelsey graduated with her doctoral degree in Health Education and Exercise Psychology from the University of Kansas (KU) in May of 2022. With an undergraduate degree in community health, and professional work within community coalitions, health program planning, implementation, and evaluation, and nutrition, physical activity, tobacco, and stress management education, she has had a diverse portfolio working both as a researcher and practioner.
Her primary research topics are nutrition and physical activity related behaviors with an emphasis on food insecurity, health outcomes associated with poor access to food, and food systems. She has recent publications as the first author with the Journal of the American college of Nutrition and Nutrients, and an article under review in the Journal of American College Health (https://orcid.org/0000-0002-7687-7752). Upon graduation she accepted a postion with the University of Missouri Kansas City (UMKC) as an Assistant Teaching Professor in the Department of Nursing and Health Studies. She teaches classes in the Bachelors of health sciences program and plans to continue her research work related to access to health food as a social determinant of health.
