Dr. Peter Stolz studied Nutrition Science at the University of Stuttgart-Hohenheim from 1982 to 1989. He graduated his diploma thesis at the Fraunhofer-Institute for “Grenzflächen- und Bioverfahrenstechnik“ in Stuttgart-Vaihingen. From 1989 until 1991 he worked as a scientist at the Fraunhofer-Institute. From Jan 1991 until September 1994 he worked on his Doctor thesis “Maltose metabolism of Lactic acid bacteria from sourdough†at the Institute of Food Technology and Food Microbiology in Stuttgart-Hohenheim.
In Jan 1995 he started to work for Ernst Böcker GmbH & Co.KG. From Jan 1995 until March 2002 he was head of the R&D and Quality Assurance department at Böcker.
From October 2002 until March 2006 Dr. Stolz managed the Competence Center Bread Ingredients at BIB-Ulmer Spatz in Bingen (CSM), responsible for research projects and their translation into product developments at CSM Bread Ingredient companies in Europe.
In April 2006 Dr. Peter Stolz went back to Ernst Böcker GmbH & Co.KG. Since March 2006 he is head of the Business Development, Product Application and Technical Sales but he also still works in the Product Development department.
Dr. Peter Stolz is married and has one son.
