Richard Leboucher has a master’s degree in food science and technology with more than 20 years of experience in researching and developing ingredient solutions for the baking industry; he is currently the Director of R&D Bakery for Puratos USA. After beginning his career with Puratos overseas, Richard gained extensive Research and Development experience within the US baking industry.
Richard has an extensive knowledge on bread formulation and texture optimization. Over the past years, Richard has dedicated his time to the development of bread texture in an effort to help differentiate products.
Over these years, the Puratos team came to realize that texture was just as important to the consumer as taste. With this valuable information in hand, the R&D team led by Richard developed an entire range of texture solutions to fit the need of customers.
Richard’s team also includes a host of application specialists to formulate for specific customer requirements and apply the solution onsite in the customer’s facility.
