World Bread Awards
Stephen Hallam is Brand Ambassador for Dickinson & Morris and Chair of Judges for the Tiptree USA World Bread Awards. At IBIE, in his presentation Stephen will will be sharing tips and knowledge and taking the audience through the various criteria against which loaves are assesed in Bread competitions - an insider view of what the Judges are looking for.
Stephen managed the direction of Dickinson & Morris at Ye Olde Pork Pie Shoppe in Melton Mowbray for 28 years. He has brought the Melton Mowbray Pork Pie to life through his interesting demonstrations, showing the technique of hand raising authentic Melton Mowbray Pork Pies. Since retirement in 2020 he continues to be the Brand Ambassador for the Company.
A baker by profession Stephen has quite literally worked his way around the world (3 times), having spent a significant amount of time as Head Patissier on the QE2 (including the Falklands campaign), as well as working in Germany and Spain.
He has won numerous industry awards including the prestigious City & Guilds Silver Medal for Bread Making and the Daily Telegraph voted him ‘The Nicest Man in England’ for Outstanding Customer Service.
He is a Liveryman and past Court Assistant of the Worshipful Company of Bakers, Past President of the Bakers & Confectioners’ Association and a member of the British Society of Baking.
With an excess of energy and enthusiasm that inspires those around him Stephen's enthusiasm is simply infectious, and he never fails to draw a crowd.
He is a superb ambassador for the bakery industry and often appears on TV or radio waxing lyrical about Melton Mowbray pork pies and the importance of Britain’s regional food heritage.
He has featured in food programmes and met with Ministers, yet still finds time to support local tourism and food associations.
