Jonathan Davis, Culinary Innovation Leader , Aspire Bakeries
Jonathan Davis has been with La Brea Bakery since the beginning. He began working with James Beard Award winning chef, Nancy Silverton, leading her baking division of famed Los Angeles restaurant Campanile, nearly 25 years ago.
Jonathan studied at the California Culinary Academy of San Francisco, but actually didn’t like his baking courses. He was poised to be a savory chef, but on a whim accepted a position with Nancy.
After six years of working at Il Campanile, La Brea Bakery was officially formed and Jonathan was asked to move to Las Vegas to help open the much anticipated Bellagio Hotel and Casino. La Brea Bakery would be the premier bread for all the restaurants at the new hotel and Jonathan led all development. In 1998, Jonathan worked alongside some of the culinary giants in Las Vegas including Todd English, Grant McPherson and Michael Mina.
After a successful Bellagio opening, Jonathan moved back to Los Angeles to run the original La Brea Bakery DSD Bakery, responsible for the development and production of hundreds of baked goods being delivered across Southern California every day. Today, Jonathan is the Culinary Innovation Leader for Aspire Bakeries, and considered the palate of the brand. Everything that goes out the door must meet his approval.
Jonathan is extremely passionate about La Brea Bakery and baking in general. He inherently has a passion for the best food possible and is constantly pushing the boundaries to ensure La Brea Bakery remains a leader in the industry. If there is one thing he wishes people understood more, it’s the process and magnitude of talent and time involved in every single loaf. In his free time, Jonathan enjoys brewing beer and cooking with his family.
