As a high school exchange student, David Norman first learned a whole new way of eating and it was based around bread. After studying German Literature and spending another year abroad in the wonderful bread culture of Germany, he began making bread at home and after college found his first job in a small local French-style bakery. Thirty-odd flour dusted years later, baking has taken him from Florida back to the Midwest, to the West Coast, New York City and now Austin, Texas, where he developed the bread and pastry for Easy Tiger, a growing local Bake Shop and Beer Garden concept, where he is the Head Doughpuncher and a partner.
Along the way, he has worked at some great bakeries including Grand Central Bakery in Seattle, Ecce Panis in New York City and was the head baker at Bouley Bakery before moving to Texas in 2002.
He has taught professional baking courses at the French Culinary Institute and the San Francisco Baking Institute. He was nominated as a semi-finalist for Outstanding Baker by the James Beard Foundation in 2020.

Easy Tiger currently has three retail and restaurant locations in Austin as well as a wholesale bakery with over 150 clients including HEB, Whole Foods Market and many restaurants and hotels.
