Mariah Kay (Dougherty) Jackson is a Registered Dietitian Nutritionist who completed her Bachelor of Science degree at Iowa State University. She then completed an 11-month Dietetic Internship and Master of Medical Nutrition degree at the University of Nebraska Medical Center in Omaha, Nebraska. She worked as a Nutrition Therapist at Nebraska Medicine in Omaha, where she provided coverage for multiple patient populations and served as an outpatient dietitian in the Multi-Organ Transplant Clinic (MOTC), working with patients with various pancreatic conditions. She now has transitioned to a Faculty Instructor role in the Medical Nutrition Education Division in the College of Allied Health Professions, University of Nebraska Medical Center. In her current role, she is performing clinical and epidemiologic research related to nutrition and cancer. She also teaches Masters nutrition and research classes. She is currently seeking her PhD at UNMC in Patient Oriented Research, focusing on cancer and nutrition.
