Qiaobin Hu studied nutritional sciences at the University of Connecticut and obtained his Ph.D. degree in 2019. He joined the Department of Food Science and Engineering at Nanjing University of Finance and Economics, China, as an assistant professor in 2019. His research is highly interdisciplinary and he applies materials science and engineering principles to understand physical and chemical interactions among various natural biomaterials and design novel carriers for the delivery of therapeutic agents. Dr. Hu is currently a full-time researcher at Arizona State University, where he continues to make further breakthroughs in the nutritional science field. His research focuses on the development of biocompatible and biodegradable nanocarriers to optimize phytochemical bioactivity for prevention and alleviation of chronic diseases, especially obesity. In particular, he is investigating nanoencapsulated trans-resveratrol for use as an edible coating on fresh-cut fruits and vegetables.
