Dr. Kristen Hicks-Roof is a Registered Dietitian and an Assistant Professor in the Department of Nutrition & Dietetics at the University of North Florida. Her major research interests focus on program development and evaluation. One program is focused on interprofessional education and communication among the healthcare team. The second program is focused on mentoring in dietetics. She is an expert at course development and engagement, specifically in the online environment. Dr. Hicks-Roof is active within many professional communities being awarded the Registered Young Dietitian of the Year of Texas in 2016, she has presented her research at over 40 invited and professional presentations and has over 30 published articles and media.
