My name is Jenna McClure and I am a first year PhD Food Science student at Ohio State. I completed my bachelors degree at Ohio State in Exercise Science followed by my masters degree in Food Science. My masters work focused on the use of soy protein and muscle recovery following intense exercise. I conducted a clinical trial on male athletes and helped develop a food product to be used in this study. My current work is focusing on the effect of fiber on the gut microbiome and subsequent mental health. I am extremely passionate about health and nutrition and focusing on using food to heal the gut as well as many other chronic diseases.
