Mariah Kay Jackson is a Registered Dietitian Nutritionist who completed her Bachelor of Science degree at Iowa State University. She then completed her Dietetic Internship and Master of Medical Nutrition (MMN) degree at the University of Nebraska Medical Center (UNMC) in Omaha, Nebraska. She worked as a Nutrition Therapist at Nebraska Medicine in Omaha, where she provided coverage for multiple patient populations and served as an outpatient dietitian in the Multi-Organ Transplant Clinic (MOTC), working with patients with various pancreatic conditions. She now has transitioned to a Faculty Instructor role at the University of Nebraska Medical Center, College of Allied Health Professions. In her current role, she is performing clinical and epidemiologic research related to nutrition and cancer. She also teaches Masters nutrition and research classes. She is currently seeking her PhD at UNMC in Patient Oriented Research, focusing on cancer and nutrition.
