Jennifer A. Bolton has a Bachelor of Arts in Honors Liberal Arts and Sciences and a Master of Science in Nutrition. She has experience working in hospital pharmacy and government procurement as a Certified Pharmacy Technician. Her previous research involved aging and genetics in yeast, and health behaviors in adults with Intellectual Disabilities in the community. She is currently a Dietetic Intern and PhD Candidate in the Department of Dietetics and Nutrition at Florida International University. Her dissertation work is under Dr. Cristina Palacios and in collaboration with the Computer Science Program on the web application “Baby Feed” for health professionals and parents to improve infant and toddler diet quality. This innovative research is focused on nutrition assessment, technology, and early childhood obesity prevention in the clinical setting. In the future, Jennifer is interested in continuing to develop evidence-based nutrition programs and policies on the local, state, and national levels.
