I enrolled in the Doctoral program in Food Sciences in 2018 at the National Polytechnical Institute in Mexico City, which was my first approach to science.
I was a visiting scholar at the University of Illinois from fall 2019 to summer 2021 resulting in 3 peer-reviewed publications. My research focused on the conjugation of the soybean lunasin and amaranth unsaponifiable matter as a squalene source into liposomes to be tested against melanoma cancer. My work started from amaranth unsaponifiable matter and soybean lunasin extraction, followed by liposome formulation, characterization, optimization, and challenge against melanoma cancer in an in vitro and in vivo studies. I think that finding alternatives to help cancer treatment is a priority in order to decrease side effects and help patients.
I helped to teach a biochemical laboratory class and taught different undergrad students to perform experiments and analyses.
