I'm a Food Engineer with an M.Sc. Food Science and Technology and Ph.D. Food Science. I'm currently a postdoctoral researcher at the Institute of Neurobiology from the National Autonomous University of Mexico (UNAM) where I'm researching about the impact of maternal prolactin in the metabolic programming, intestinal permeability, and gut microbiota development. During my research career, I've been involved in research simulating the in vitro gastrointestinal digestion of food components and their impact on intestinal inflammation, colon cancer, and obesity. I'm fully committed to providing better food choices to prevent the risk to develop chronic non-communicable diseases.
