Denise George Beaudoin is an attorney, community activist, and recently earned her Masters of Science in Nutrition and Health Promotion and Didactic Program in Dietetics Certificate (DPD) from Simmons University. In addition, Ms. Beaudoin completed her Dietetic Internship year where she completed a clinical rotation at Cambridge Hospital and community rotations with Community Servings (medically tailored meals for the critically ill) and the Northeast Regional Office of the United States Department of Agriculture (USDA). The current research presentation was part of Ms. Beaudoin's Master's thesis with co-author Sarah C. Lemire BS MS and faculty advisor Elizabeth Siu PhD RD. Ms. Beaudoin is a graduate of Boston University School of Law and, while raising three children, was inspired to study nutrition when supporting her son, through nutrition recommendations, break his high school’s 800-meter track record. Ms. Beaudoin is an advocate for public policies directed at addressing food insecurity and lives with her husband in Dedham, Massachusetts.
