Mindy Patterson, PhD, RDN is an Associate Professor of Nutrition at Texas Woman's University, Houston, Texas. She is also the Co-Director of the Institute for Women's Health, a multi-disciplinary research hub examining the prevention and treatment of health conditions specific to women. Dr. Patterson also serves as the Chair of the Institutional Review Board (IRB) on the Houston campus.
She has extensive experience conducting clinical trials utilizing resistant starch as a dietary intervention, including both food sources and supplements on glycemic, inflammatory, and peptide-related outcomes. She also has conducted reserach dentifying changes in gut microbiome diversity and function following dietary interventions. She has develop nutrient-specific databases and formulated diets with bioactive compounds which are used in her clinical trials.
