My name is Jiayue Guo, and I recently obtained my PhD degree in Human Nutrition from the University of Alabama. My research mainly focuses on the structure-function relationship of carbohydrates, encapsulation of bioactive compounds via inclusion complexation, and development of novel food structure containing resistant starch for improved heath outcomes. During my PhD study, I have published 13 peer-reviewed journal articles and presented my research at several international conferences. As one of my career goals, I would love to continue and expand my research and become an independent researcher.
