I am a Ph.D. candidate and dietetic intern in the Department of Nutrition and Food Sciences in the College of Health Sciences at the University of Rhode Island. My experiences as a Latina have largely motivated my pursuit of a career as an independent researcher in academia, while specifically prioritizing maternal and global nutrition. As a researcher, I see exceptional value in nutrition-related approaches as critical avenues to prevent adverse health outcomes and minimize health disparities during pregnancy, infancy, and throughout the lifetime.
My area of research is in Global Nutrition, Maternal Health, Micronutrients, and Oxidative Stress. Currently, I am investigating the effect of oyster consumption on oxidative stress and micronutrient concentrations in Ghanaian women. This relates to my dissertation topic, the associations between oyster consumption and iron, zinc, and cadmium concentrations in Ghanaian women.
My career goals are to continue in Academia where I can use my knowledge of dietetics to strengthen my research design and applications.
