Vi Vien Khoo is a 1st year doctoral student and had joined the department of nutrition in Fall of 2021. Vi Vien received her Master’s of Science in Human Nutrition and completed her dietetic internship in 2019 at Oregon Health & Science University. Vivien is a registered dietitian and during her career, she had felt the need to further her understanding on various diseases to best help her patients. She is currently working with Dr. SoonKyu Chung and is a part of the Nutrients and Bioactive for Health Cluster here at UMass. Her research interests include understanding the complexities between functional foods and bioactive compounds and their potential for health management. Her current research is to investigate and develop a better understanding of cancer cachexia in individuals with pancreatic ductal adenocarcinoma.
