Hello, my name is Joey Eggers and I am a master’s student at the University of Minnesota in Dr. Daniel Gallaher’s Nutritional Biochemistry Lab. I graduated with my BS in Nutrition in May 2019 while working as an undergraduate research assistant in the Gallaher Lab. In the summer of 2019 while I was still working in the Gallaher Lab I was informed of an opportunity to get a master’s degree working on an extension of the project that I was already involved with. In the spring of 2020 I started my MS research working on a novel dietary fiber called Polylactose and its impact on fatty liver and the gut microbiome. This project quickly became derailed due to the COVID-19 pandemic. In the summer of 2020 I switched my thesis project over to researching the health benefits of plant-based proteins. I am now a few weeks away from graduating with my MS in Nutritional Biochemistry and looking for jobs in the research and development of raw ingredients, dietary supplements, and other nutritional bioactives. In the past I have also worked with pharmaceuticals and researched the innovation of food safety techniques for milk protein powders.
