Ms. Goulart is a current graduate research assistant at Texas A&M University. She obtained her Bachelors of Science in Nutrition from Auburn University where she graduated with honors and Summa Cum Laude. During her time at Auburn she was a Nutrition Research Fellow and worked under Dr. Michael Greene invesitgating colon cancer and obesity under the umbrella of metabolic diseases research. During her time at Texas A&M, she has led a number of research projects focusing on the impact of various nutrients on cognitive performance and cognitive fatigue. However, her primary research interests include bone physiology and how nutrition takes part in the bone remodeling process. She is slated to begin a study investigating bone-muscle crosstalk in a mouse model of diabetes in this upcoming year.
