Siqiong (Rosalie) Zhong is a PhD candidate in the OSU Interdisciplinary Nutrition program. She has a master’s degree in Food Safety and Technology from the Illinois Institute of Technology, and a bachelor’s degree in Food Science and Engineering from Huazhong Agriculture University, China. She is interested in bioactive compounds and their metabolism and bioactivities in humans. Her previous research focused on the metabolism of berry polyphenol in humans using UHPLC-Q-TOF and UHPLC-QQQ. Her current research investigates iron enhanced vegetables using novel food processing techneques and the effecacy of the iron delivery. She also studies chlorophyll derivative uptake and metabolism using Caco-2 cell culture.
