This paper presents the processes and outcomes of a project 'Co-Creating Safe and Enjoyable Meals for People with Swallowing Disability' funded by the Australian Government National Disability Insurance Scheme Quality & Safeguards Commission, and the Victorian Department of Families, Fairness and Housing in 2020-2021, aiming to create mealtime assistance training to reduce the incidence of choking and improve the health and wellbeing of people with swallowing disability. The project has resulted in the creation of a range of free resources for multiple audiences. We outline (a) the process of consultations made with key stakeholders and a large consortium of partners representing people with swallowing disability, self-advocacy organisations, professional associations including Speech Pathology Australia, Dietitians Australia, and disability service providers; and (b) implications for speech-language pathologists implementing use of the resources to prevent choking and enhance mealtime enjoyment.
