Dr. Kimberly Livingston is a nutritional immunologist that specializes in animal and human gut health. Kim earned her B.S. (Animal Science) and M.S. (Poultry Nutrition) at the University of Illinois. She completed her doctorate at University of California at Davis in nutrition and immunology. Kim expanded her knowledge of nutrition and immunity in humans during her postdoc at the USDA Western Human Nutrition Research Center. She also was on faculty at two universities; California Polytechnic State University and the Prestage Department of Poultry Science at North Carolina State University.
As a nutritional immunologist, her primary goal is to help clients around the world understand how nutrition and immune stress alters the development and function of the gastrointestinal tract. She strives to help customers find and implement solutions successfully. She designs experiments that allow companies to best determine products value propositions and positioning in the market. She can provide trainings on general immunology, gut immunology, and metabolism.
