Christine Bone is a PhD candidate at the Department of Animal Biosciences at the University of Guelph. Christine studies the physiological and endocrinological processes that lead to the development of an off-odour and off-flavour in heated pork products, known as boar taint. Christine's work focusses on the transport of free and sulfated androstenone in the peripheral plasma of the boar, and the uptake and accumulation of these compounds into the fat.
