Kasey Maddock Carlin is an Associate Professor of Meat Science/Muscle Biology in the Department of Animal Sciences at North Dakota State University. She received a B.S. in Animal Sciences and Biotechnology from North Dakota State University, a M.S. in Animal Science from the University of Missouri-Columbia, and a Ph.D. in Meat Science from Iowa State University. Her research focuses the postmortem changes in muscle structure and subsequent impacts on quality and palatability of meat products. She also teaches Principles of Meat Science to undergraduate students and Advanced Meat Science to graduate students at NDSU.
