Dr. Huff-Lonergan is a Professor in the Animal Science Department at Iowa State University. She is an internationally known, highly respected researcher in applied muscle biology and early post-mortem muscle/meat biochemistry. Her research focus is on biochemical mechanisms in muscle that influence efficient muscle growth and also fresh meat quality. Her research program uses cutting-edge protein chemistry techniques and has significant practical applications for the livestock industry. The Lonergan lab is recognized as one of the foremost laboratories in calpain biology in skeletal muscle of livestock. Elisabeth is a fellow in IFT (Institute of Food Technologists), and a recipient of the Signal Service Award of the American Meat Science Association. She has been awarded the Distinguished Research Award for AMSA and the Meat Science Award for ASAS. In 2016, she was named a recipient of the Iowa State University Regents Award for Faculty Excellence. She has been a member of the Board of Directors for the American Society of Animal Science and of the American Meat Science Association.
